I thought I knew a lot about French cooking but the courses and recipes at The French Cooking Academy have really broadened my knowledge and encouraged me to try new things. After learning to make easy puff pastry from scratch, the next step was to try Stephane's recipe for Pithivier, a luscious puff pastry pie filled with ham and cheesy béchamel. It was delicious. A total success!
