John Mellis has become known as one of Scotland’s most successful bee farmers, with his honey in great demand for its unique flavour. The distinctive flavour of his honey is down to the countryside the hives are positioned in, with trees, wildflowers and heather providing the nectar the bees need.
Gathered on the moors in late summer...
In July of each year, hives are moved to the heather moors and initially the bees collect from the bell heather, clover and other wildflowers of the upland pastures. Latterly, they gather the distinctive ling heather and the resulting blend is a honey with an extremely good flavor.
Delicious on toast, scones, pancakes and in tea.
